Chorizo Meatloaf? image

this meatloaf recipe,it's half beef and half chorizo,that's i created,and it stuffed.

Number Of Ingredients 12

1 tablespoon(s) avocado oil
1 medium vidalia sweet onion,peeled and sliced
2 banana peppers,chopped
1 tablespoon(s) taco seasoning
1 pound(s) lean ground beef
6 ounce(s) soft mexican chorizo,removed from casing and crumbled
1 tablespoon(s) sea salt/black pepper
1 teaspoon(s) ground cumin
3 egg whites
1/2 cup(s) ranch dressing
3/4 cup(s) panko bread crumbs
2 cup(s) shredded sharp cheddar cheese,divided

Steps:

  • Preheat oven to 350 degrees F.
  • Heat avocado oil in a large,deep skillet over medium heat.Add sliced vidalia onion and chopped banana peppers,saute for 5 minutes until are tender.Season with taco seasoning.Remove from heat.Set aside.
  • In a large bowl,combine ground beef,crumbled mexican chorizo,sea salt/black pepper,ground cumin,egg whites,ranch dressing and bread crumbs;mix well.
  • Spoon 1/2 of meat mixture into the bottom of an 8- x 4-inch loaf pan.Arrange sauteed vegetables and 1 cup shredded sharp cheddar cheese.
  • Top with remaining meat mixture,patting to combine both halves.Add remaining shredded sharp cheddar cheese on top.
  • Bake for 35 minutes or until done.Cool completely.Cut into 8 slices and serve.
