Steps:
- 1. 1 box or bag (2 pounds) elbow macaroni. Cook elbow macaroni as directed on box.
- 2. Drain and rinse the pasta in a colander. Set aside.
- 3. While the elbow macaroni is cooking: In a large skillet, cook the chorizo, onion, garlic and yellow squash until cooked (about 10 minutes).
- 4. Add the diced tomatoes, tomato paste, water and spices. Simmer 5 minutes.
- 5. Put some elbow macaroni into bottom of bowls. Scoop Chorizo Sauce mixture on top of elbow Macaroni.
- 6. Serve! *** You can also add some pasta to the other ingredients, but I prefer not to. *** optional: taco toppings to garnish.
