Choice Hush Puppies Recipe image

For this recipe you MUST use old fashioned, stone or water ground white corn meal. Hush Puppies, it's said, were originally tag ends of cornbread dough, deep fried and tossed to dogs at mealtime to "hush them up" Serve hush puppies with seafood, especially breaded or batter fried fish.

Number Of Ingredients 9

Shortening or cooking oil for deep fat frying
2 C Sifted fine stone (or water) ground white corn meal
1 Tbs Sugar
3/4 tsp Baking soda
2 tsp Salt
1 Tbs Minced yellow onion
1 Egg
1 C Buttermilk
4 to 5 Tbs Cold water

Steps:

  • Begin heating fat in a deep fat fryer; use a deep fat thermometer. Stir corn meal, sugar, soda, and salt together. Mix well. Place onion in a bowl, add egg and buttermilk and beat until frothy; pour all at once into meal and stir lightly to mix. Add just enough water to make dough a good dropping consistency (it should be about the same as drop biscuit dough). When fat reaches 375 F.,scoop up rounded 1/2 tablespoons of dough, shape lightly on end of spoon to smooth our rough edges, drop into fat and fry about 2 minutes or until evenly browned.Drain quickly on paper toweling and serve hush puppies sizzling hot.
