Chocolate Mayonnaise Cake (Depression Era) image

This recipe belongs to my mother who got it from her father born in 1911. When eggs and milk were scarce during the Depression, mayonnaise was used in place.

Number Of Ingredients 8

2 c all purpose flour
1/2 c unsweetened cocoa powder
1-1/2 tsp baking soda
1/4 tsp salt
1 c cane sugar
3/4 c mayonnaise
1 c water
1 tsp vanilla

Steps:

  • 1. Mix the following dry ingredients together: flour, baking soda, salt, and cocoa. If you do not have a sifter, blending this with your mixer will suffice.
  • 2. Cream the sugar, mayonnaise, water and vanilla together.
  • 3. Combine dry and creamed mixtures; stir until well blended.
  • 4. Pour batter into greased and floured 13x9x2 pan. Bake at 350°F. for about 20 to 30 minutes depending on your oven or until a toothpick inserted in the center comes out clean and cake slightly pulls away from the sides of the pan.
