CHOCOLATE COATED ORANGE COOKIES image

1 1/2 cups all-purpose flour
1/2 cup sugar
1/4 cup cornstarch
1 Tbsp plus 1 tsp grated orange zest
1/4 tsp salt
12 Tbsp chilled unsalted butter, cut into pieces
1/2 tsp vanilla extract
4 oz semisweet or bittersweet chocolate, chopped

Steps:

  • 1. Preheat the oven to 350 degrees. 2. In a food processor, combine the flour, sugar, cornstarch, orange zest and salt and process briefly until mixed. Add the butter and vanilla and process until the mixture resembles fine meal. Then process continually until moist clumps form. 3. Transfer the mixture to a large sheet of wax paper and shape it into a disk. Put another piece of wax paper on top and roll out dough until it is about 1/4 inch thick. Use a 1/2-inch cookie cutter to cut out cookies. Combine the dough scraps and roll out again, then cut out additional cookies. 4. Bake cookies for about 15 minutes, or until they are just beginning to brown, rotating the pans halfway through baking. 5. Let the cookies cool on the pan for about 5 minutes, then transfer to a wire rack to cool completely. 5. Melt the chocolate in a double boiler or in the microwave. If using a microwave, be very careful not to let the chocolate burn. 6. Dip the cooled cookies halfway into the chocolate, arrange the cookies on a lined baking sheet and refridgerate until the chocolate sets.
