1 cup butter, softened
1/2 cup confectioners' sugar
1 teaspoon grated orange zest
1 teaspoon orange extract
2 cups all-purpose flour
1/4 teaspoon salt
6 ounces dark chocolate candy coating
1/2 cup chopped almonds, toasted

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in orange zest and extract. Combine flour and salt; gradually add to creamed mixture and mix well., Divide dough into 36 pieces; shape each into a 2-1/2-in. rope. Place 2 in. apart on ungreased baking sheets. Bake 10-12 minutes or until set. Cool 2 minutes before removing from pans to wire racks to cool completely., In a microwave, melt candy coating; stir until smooth. Dip ends of cookies in coating; allow excess to drip off. Sprinkle with almonds. Place on waxed paper; let stand until set. Store in an airtight container.

1 1/2 cups all-purpose flour
1/2 cup sugar
1/4 cup cornstarch
1 Tbsp plus 1 tsp grated orange zest
1/4 tsp salt
12 Tbsp chilled unsalted butter, cut into pieces
1/2 tsp vanilla extract
4 oz semisweet or bittersweet chocolate, chopped

Steps:

  • 1. Preheat the oven to 350 degrees. 2. In a food processor, combine the flour, sugar, cornstarch, orange zest and salt and process briefly until mixed. Add the butter and vanilla and process until the mixture resembles fine meal. Then process continually until moist clumps form. 3. Transfer the mixture to a large sheet of wax paper and shape it into a disk. Put another piece of wax paper on top and roll out dough until it is about 1/4 inch thick. Use a 1/2-inch cookie cutter to cut out cookies. Combine the dough scraps and roll out again, then cut out additional cookies. 4. Bake cookies for about 15 minutes, or until they are just beginning to brown, rotating the pans halfway through baking. 5. Let the cookies cool on the pan for about 5 minutes, then transfer to a wire rack to cool completely. 5. Melt the chocolate in a double boiler or in the microwave. If using a microwave, be very careful not to let the chocolate burn. 6. Dip the cooled cookies halfway into the chocolate, arrange the cookies on a lined baking sheet and refridgerate until the chocolate sets.
