Chocolate Cherry Cookies image

This recipe was given to me by Joan and Karen friends of cook book II. They are sisters and make these together every year for the past 50 years. When I worked at the newspaper they would always bring a plate over for us all to share. They are so good!

COOKIE:
1/2 c butter or margarine
1 c granulated sugar
1 large egg
1 1/2 tsp vanilla extract
1/2 c baking cocoa
1/4 tsp salt
1/4 tsp each -baking powder and baking soda
1 1/2 c all purpose flour
36-48 maraschino cherries-well drained and patted with paper towel

Steps:

  • 1. Cream butter, sugar , egg and vanilla until light and fluffy. Add remaining ingredients; blend at low speed until a dough forms( will be stiff). Shape into 1 inch balls; push a cherry part way into each ball(so cherry is showing 1/2). Place 2 inches apart on ungreased cookie sheet cherry side up. When cookies are molded, prepare frosting and use immediately. Yes this is correct. --- Frosting: 1 c. semi-sweet chocolate chips 1/2 c. sweetened condensed milk 1/4 teas. salt 1 1/2 teas. maraschino cherry juice Melt chocolate with milk over low heat in saucepan, stirring constantly. Remove from heat and add remaining ingredients. Stir. Frost each cherry with 1/2 teaspoon of frosting.(frosting will spread over cookie slightly while baking. Bake at 350^ for 8-10 minutes until puffy. Cool on wire rack or paper bag. Store in covered container when cold.
