CHOCOLATE CHAI SNICKERDOODLES image

Yield 3.5 dozen

Number Of Ingredients 12

2 1/4 cups sugar
1 tsp ground cinnamon
1 tsp ground ginger
1 tsp ground cardamom
1/2 tsp ground allspice
1/2 tsp ground white pepper
1/2 cup unsweetened cocoa powder
1 cup butter, softened
2 eggs
2 tsp vanilla extract
2 1/4 cups flour
1 1/2 tsp baking powder

Steps:

  • 1. In large mixing bowl, combine sugar & spices. Reserve 1/2 cup of mixture in a shallow bowl. 2. Add cocoa powder to mixing bowl. Stir to blend. 3. Add butter. Beat at medium speed until fluffy. 4. Add eggs & vanilla. Beat at low speed until combined. 5. Stir in baking powder & flour (1/2 cup at a time). 6. Let dough refrigerate overnight. 7. Shape 1 tbsp of dough into ball. Roll in reserved sugar-spice mixture. Place on parchment-lined (baking mat) cookie sheet. Repeat with remaining dough, placing balls 2 inches apart. 8. Bake at 350 degrees until edges are firm. about 12-15 minutes (14 minutes convection oven). Cool on wire racks.
