Mom got this recipe from my Aunt Waneta Lynch Harris around 1963. My brother, Bob, always wanted this cake as his birthday cake. Mom always served it without frosting, but my niece, Emilea, who is a pastry chef, recently added a cream cheese frosting. So I'm including a Cream Cheese Topping that can be added, if you wish. =^..^=

Steps:
- Stir the apple slices and sugar together in a large bowl & let stand for one hour.
- Add oil, baking soda, baking powder, flour, vanilla, eggs, walnuts, & raisins to the apples & sugar and mix together well. You may need to add a little milk (start with 1 Tablespoon) to make the batter stirrable, depending on the juiciness of the apples.
- Pour the batter into a cooking-sprayed 13 x 9 pan.
- Bake at 350 degrees F. for 40-45 minutes, until a toothpick comes out clean from the center.
- Sprinkle with a little confectioner's sugar, if desired. Serve warm or cooled. Top with Cream Cheese Topping or whipped cream.
- CREAM CHEESE TOPPING: Beat all ingredients together using a mixer until well-blended. Chill until ready to use.
