CHIPOTLE SWEET POTATOES image

5 1/2 pounds sweet potatoes (about 8 large), scrubbed
4 cloves Garlic, in skins
2 canned Chipotle Chilies in adobo sauce, (makes 1 T paste)
3 tablespoons butter, cut into pieces and softened
S&P, White Pepper to taste

Steps:

  • Prick Sweet Potatoes and roast with Garlic on foil lined cookie sheet in convection oven at 425 for 45-70 mins. (450 deg 60-90 mins) Remove Garlic and check on Potatoes at 45 min point. Press peeled Garlic and Chilies through sieve with the back of a spoon into large mixing bowl. Add Butter. Cool Potatoes enough to handle and squeeze pulp from skin onto other ingredients. Add S&Ps and stir with a spatula until seasonings are evenly mixed. Reheat in a buttered casserole.
