CHIPOTLE CORN CHOWDER image

Number Of Ingredients 14

1 T Butter
2 T Minced Garlic
2-12 oz cans sweet corn
2 Ribs Celery(finely diced)
1 Medium red or white onion(finely diced)
1 Carrot (finely diced)
2 C chicken stock-(Homemade if you can)
2 C Heavy Cream
1 6-8 oz can Chipotle Peppers(in Adobo sauce if you can find it)-finely diced or food processed
1 tsp Paprika
1 T Salt
1 T Pepper
1tsp cayenne pepper
Corn Starch and water to thicken...I leave that to you...make a slurry of both and add during a boil until it thickens to desired consistency.

Steps:

  • put butter and minced garlic in bottom of heavy saucepan on medium heat. This recipe required low to medium heat only. Once at a simmer add mire poix(onions carrots and celery) Cook down for 3 min on medium heat until slightly tender. Add all dry spices and mix thoroughly. Immediately add half of the stock. Then add the chipotle peppers and adobo sauce. Add the rest of stock and cream Bring to a simmer add cans of corn reduce for 10 min on low\ if still too thin bring to a boil and add slurry of water and starch slowly until thickens to consistency of clam chowder. Add bacon or pancetta if you like...not bad with a half cup of good dark beer either...or chicken...its limitless and it will warm your belly.
