Steps:
- Cut the watermelon and press out the juice, all of the juice. Not some of it, but all of it. Put the juice of the watermelon in a saucepan and bring to a simmer. Add the sliced peppers and salt. Simmer for 20 minutes. Remove from heat. Remove peppers from saucepan and add lime rind. Place in ice bath and cool. Add lemon juice and minced sweet onion. Place in refridgerator over night. Serve in a pretty bowl and decorate with mint leaves.
