Chili Salsa Beef image

Number Of Ingredients 9

1.5 lb boneless beef chuck roast
1 Tbsp olive oil
1 c chunky salsa
2 Tbsp brown sugar, firmly packed
1 Tbsp soy sauce
1 garlic clove, crushed
cilantro, fresh and chopped
2 Tbsp fresh lime juice
2 c hot cooked rice

Steps:

  • 1. Trim fat from beef.
  • 2. Cut beef into 1 1/4\" pieces, in dutch oven, heat oil over medium heat until hot.
  • 3. Add beef (half at a time) and brown evenly, stirring occasionally.
  • 4. Pour off drippings.
  • 5. Stir salsa, sugar, soy sauce and garlic into beef.
  • 6. Bring to a boil; reduce heat to low.
  • 7. Cover tight and simmer 1 hour.
  • 8. Remove cover; continue cooking, uncovered 30 minutes longer or until beef is tender.
  • 9. Remove from heat; stir in chopped cilantro and lime juice.
  • 10. Spoon beef mixture over rice.
  • 11. Garnish with cilantro and lime quarters if desired.
