Steps:
- preheat oven to 350. oil a 2 quart baking dish. Place first 9 ingredients in blender till smooth. strain into a large wide bowl and stir in orange zest. Cut sweet potatoes in half length wise then cut each half into 4 inch lengths (wedges) Add to bowl and toss until coated. Transfer to baking dish then pour over the remaining liquid. Drizzle on the oil and cover tightly with foil. Bake 45 minutes until tender. Raise heat to 425, uncover the sweet potatoes and baste with liquid in the pan. Continue to bake, uncovered until they are tender, glazed and any sauce remaining in thick.
