Chickpeas with Greens and Garlic image

A Moroccan recipe that makes a tasty side. Adjust the amount of garlic to your liking. Enjoy!

Number Of Ingredients 6

2 tablespoon(s) extra-virgin olive oil
6-8 clove(s) garlic, crushed
1 pound(s) mustard greens, trimmed and coarsely chopped
salt and freshly ground black pepper, taste
1 cup(s) vegetable broth
2 can(s) (15 ounce each) chickpeas, drained

Steps:

  • Put a large skillet over medium heat. Add the oil and crushed garlic to saute for 2 minutes. Then, add the greens. Turn the greens, wilting them in the garlic oil. Season with salt and pepper, to taste.
  • Next, add the vegetable broth to the pan and bring it to a boil. Cover the pan and reduce the heat to a simmer for approx. 7-8 minutes.
  • Uncover the pan and stir in chickpeas. Combine them well with the wilted greens. Adjust salt and pepper to your taste and serve!
