Chickpea Curry image

Number Of Ingredients 15

1 Tbsp ghee or olive oil
4 clove garlic minced
1 Tbsp grated ginger
1 small onion diced
1 tsp each madras curry powder and ground cumin
1/2 tsp each turmeric and ground coriander
2 Tbsp brown sugar
1/2 Tbsp cayenne pepper
15 oz can chickpeas drained
1 c heavy cream
2 Tbsp tomato paste
salt to taste
1 Tbsp lemon juice
basmati rice and naan for serving
cilantro for garnish

Steps:

  • 1. Heat the ghee or olive oil in large pot. Add the garlic, ginger and onion and cook until fragrant. Add the spices and brown sugar and cook 2 minutes. Add the chickpeas, heavy cream and tomato paste. Cook until warmed through. Taste and adjust for salt. Add the lemon juice and serve with rice, naan and garnish with cilantro
