Steps:
- 1. Seson chicken with salt, pepper, and thyme. Heat oil in skillet over medium-high heat. Cook chicken 5 minutes on both sides. 2. Reduce heat to low, pour off fat. Add shallot, garlic, nd tomatoes; cook for 1 minute. Add wine, cover and cook for 12-15 minutes. 3. Remove chicken to plate and cover to keep warm. 4. Boil down wine mixture until there is 1/2 cup left. If there is not 1/2 cup add more wine. Then stir in butter, parsley, and salt and pepper.
