Chicken With Country Gravy image

Tasty and very good!! My family love it!!

2 Tbsp butter
2 Tbsp canola oil
1/4 c all purpose flour
1/4 tsp paprika
1 dash(es) seasoning salt
1 dash(es) salt
1 dash(es) pepper
2 chicken leg quarters
GRAVY
1 Tbsp all purpose flour
2/3 c milk
1/4 tsp salt
1/4 Tbsp pepper

Steps:

  • 1. Place butter and oil in a medium ovenproof skillet. Place in a 425 F oven for 5 minutes.
  • 2. Meanwhile, in a large resealable plastic bag, combine flour and seasoning.
  • 3. Add the chicken, one piece at the time. Seal bag and toss to coat.
  • 4. Carefully place chicken, skin side down, in hot skillet. Bake uncovered, for 15-20 minutes on each side or until a meat thermometer reads 180 F.
  • 5. Remove and keep warm. Transfer 1 tablespoon of drippings from the skillet to a small saucepan; stir in flour until smooth.
  • 6. Gradually stir in the milk, salt and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened.
