Steps:
- 1. Place butter and oil in a medium ovenproof skillet. Place in a 425 F oven for 5 minutes.
- 2. Meanwhile, in a large resealable plastic bag, combine flour and seasoning.
- 3. Add the chicken, one piece at the time. Seal bag and toss to coat.
- 4. Carefully place chicken, skin side down, in hot skillet. Bake uncovered, for 15-20 minutes on each side or until a meat thermometer reads 180 F.
- 5. Remove and keep warm. Transfer 1 tablespoon of drippings from the skillet to a small saucepan; stir in flour until smooth.
- 6. Gradually stir in the milk, salt and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened.
