CHICKEN WITH BROCCOLI AND PINEAPPLE SALAD image

1 20 oz can pineapple chunks
3 c bite-sized chicken, skinned and cooked
2 c bite-sized cooked broccoli
1 c celery, sliced
1 1/2-2 tsp salt
1/2 tsp ground ginger
1/4 tsp pepper

Steps:

  • Day ahead: Drain juice from pineapple, reserving 1/2 c. In large bowl, lightly toss all ingredients and reserved juice. Refrigerate overnight to blend flavors.
