I love this dish! I got this recipe from Taste of Home Magazine, I think...don't quote me on that...lol It's just yummy and satisfying! Steps:
- 1. In a skillet, brown chicken in oil over medium heat for 4 min on each side. Combine the apple juice, lemon juice, rosemary, salt and pepper; pour over chicken.
- 2. Reduce heat, cover and simmer for 10 min or until chicken juices run clear. Remove chicken from pan and keep warm.
- 3. Combine cornstarch and cream until smooth, stir into cooking liquid in skillet. Bring to a boil, cook and stir for about 2 min or until thickened. Add parsley and return chicken back to skillet and heat through. Serve over rice.
