Chicken with Apple Cream Sauce image

I love this dish! I got this recipe from Taste of Home Magazine, I think...don't quote me on that...lol It's just yummy and satisfying! I hope you enjoy! *This sauce is great with pork tenderloin and chops as well... *I have added 1/2 can black beans (drained) to this sauce before... *Sauteed apples make a great side to this...

Number Of Ingredients 11

4 boneless chicken breasts
1 Tbsp olive oil, light
1 c apple juice, unsweetened
1 tsp lemon juice
1/4 tsp rosemary, dried and crushed
1/2 tsp salt
1/8 tsp black pepper
1 Tbsp corn starch
1/2 c heavy whipping cream (i used half milk)
1 Tbsp minced parsley, fresh
hot cooked rice, cooked in chicken stock (brown rice goes very well with this)

Steps:

  • 1. In a skillet, brown chicken in oil over medium heat for 4 min on each side. Combine the apple juice, lemon juice, rosemary, salt and pepper; pour over chicken.
  • 2. Reduce heat, cover and simmer for 10 min or until chicken juices run clear. Remove chicken from pan and keep warm.
  • 3. Combine cornstarch and cream until smooth, stir into cooking liquid in skillet. Bring to a boil, cook and stir for about 2 min or until thickened. Add parsley and return chicken back to skillet and heat through. Serve over rice.
