Steps:
- In large soup pan, cover chicken w/water; boil until tender, about 30 min. Save ½ of chicken for Meal 3. Drain; cut meat into bite sized pieces. Heat oven to 350o. Prepare rice as directed on pkg; set aside. In mixing bowl, combine chicken, rice, onions, water, mayo, water chestnuts & soup. Pour into greased 9 x 13" baking dish. Bake 35 min or until bubbly. Sprinkle w/cheese. Bake an additional 15 min or until cheese is melted. Wash broccoli; cut into spears. Steam until tender, drain.
