CHICKEN SZECHUAN WITH PEANUT image

2 whole chicken breasts,cut into one inch squares
1/2-1 cup raw peanuts
1-3 dried red peppers
Marinade:
1 egg white, beaten
1 T cornstarch
1 T soy sauce
1 T dry sherry
Sauce:
1/8 tsp salt
1/2 tsp MSG (optional)
3 T sugar
1 clove garlic,minced
1 T vinegar
1 T molasses
1/3 cup water
1 T cornstarch
2 T soy sauce
2 bunches green onions,chopped

Steps:

  • Stir fry chicken in hot peanut oil till white. Remove from pan. Discard oil and wipe wok with paper towel. Heat one T. sesame oil, add dried red peppers and cook till black. Add peanuts and stir fry until lightly browned.Add rest of ingredients and cook 2-3 minutes. Serves 4.
