CHICKEN SPINACH ENCHILADA CASSEROLE image

8 ounces sliced mushrooms
4 boneless chicken breasts
1 1/2 cups cheddar cheese
1 cup low fat sour cream
S & P
1 can cream of mushroom soup
8 flour tortillas
1 pkg. chopped spinach, defrosted

Steps:

  • Cook chicken. Cut into pieces & set aside. Cook mushrooms & set aside. Combine chicken, 3/4 cup cheddar cheese, sour cream, 1/2 cup of mushroom soup, spinach & salt & pepper. Warm tortillas in microwave for 15 seconds & fill with chicken mixture. Lay seam side down in a 9 x13 pan. On top layer remaining cheese, cooked mushrooms & remaining soup. Cover & bake at 350 degrees for approx. 30 minutes. Uncover & bake an additional 5-10 minutes.
