Chicken Soup for Dummies image

A quick and easy "comfort food" soup for those cold nights. My family loves it and it's very easy to make. Homemade taste in a pinch!

Number Of Ingredients 8

2 can(s) 32 oz cans chicken broth
1 1/2 lb chicken breast tenders or nuggets, cut in bite size pieces
3 clove garlic, minced
1/2 c chopped onions
3 Tbsp extra virgin olive oil
5 small potatoes, peeled, cut in half or thirds
40 small baby carrots
2 c cooked orzo, rice, or other small pasta, drained, rinsed

Steps:

  • 1. Heat olive oil in a 6-8 qt pot over medium heat. Add minced garlic. Saute until just beginning to brown. Add onions, saute until translucent
  • 2. Add chicken broth and bring to a boil. Turn heat down to medium, add chicken, potatoes, and carrots. Simmer, stirring occasionally, until vegetables are tender and chicken is cooked, about 45 minutes.
  • 3. Just before serving, add cooked orzo, rice, or other pasta. I used thin spaghetti, broken into 2 inch size pieces. Stir to mix. Serve soup with salt and pepper to taste, and grated parmesan cheese, if desired.
