Fruity Couscous Salad image

This is another dish I came up with for the Thanksgiving orange side dish contest. I was trying to think of something I could do with couscous and this is what I ended up with. Hope you enjoy! Note: Photo borrowed from internet. This was as close as I could get. It will have to do for now.

Number Of Ingredients 9

2 c couscous
1 small can mandarin oranges
1/2 c craisins
1 large apple, granny smith, diced
1 c yam, diced and cooked and chilled
1/2 c nuts, chopped
1 c raspberry vinaigrette
1 Tbsp orange honey
1 tsp mint, chopped fine

Steps:

  • 1. Cook couscous according to package directions and set aside to cool. Chop and cook yam and chill (see below). Chop apple and nuts. In a seperate bowl combine vinaigrette, honey and mint; set aside. Mix couscous, fruit and nuts together. Pour vinaigrette mixture over and toss to coat well. You may not need all the vinaigrette.
  • 2. Note: If you have not had cold yams, they have an amazing flavor. I love them in salads of all kinds. I have found the easiest way to cook them for this use is to dice/chop them to the desired size and then place them in a dish with a little water and microwave them until they are tender. Drain as soon as finished cooking and chill. I would recommend this preparation for this, as it is fast and easy and you can do it earlier.
