Steps:
- Sauté onion slices until translucent. Add ginger. Cook two minutes, do not burn. Add chicken pieces and cook until brown. Add potatoes and chicken broth. Add rice. Heat to a boil, stirring often until it has soupy risotto consistency. Lower heat to simmer. Add more broth if you like it more soupy. Serve hot with chopped scallions.
