chicken rice soup with ginger image

Number Of Ingredients 8

1/2 small onion, sliced
1/2 small piece of ginger, peeled and sliced thinly
1 tablespoon olive oil
1/2 pound chicken
1 box chicken broth
3/4 cup uncooked rice
1 small yellow potato, cubed
1 bunch scallions

Steps:

  • Sauté onion slices until translucent. Add ginger. Cook two minutes, do not burn. Add chicken pieces and cook until brown. Add potatoes and chicken broth. Add rice. Heat to a boil, stirring often until it has soupy risotto consistency. Lower heat to simmer. Add more broth if you like it more soupy. Serve hot with chopped scallions.
