Chicken & Marinated Artichoke Casserole image

Number Of Ingredients 13

2 jar(s) 12 oz. jar marinated artichokes, coarsely chopped
4 cup(s) chicken breast, cooked and cubed
2 can(s) cream of chicken soup
1/2 cup(s) milk
1 cup(s) mayo
1 teaspoon(s) fresh lemon juice
1 teaspoon(s) curry powder (or more to taste)
1 1/4 cup(s) sharp cheddar cheese, shredded
1/2 - 1 pound(s) mushrooms, sauteed in butter until golden brown
2 cup(s) rice, cooked
3/4 cup(s) bread crumbs, seasoned
2 tablespoon(s) butter, melted
parmesan cheese to sprinkle on top

Steps:

  • Drain artichokes well and coarsely chop. Add them to the bottom of a 9 x 13 baking pan.
  • Next, layer rice and chicken on top of artichokes.
  • Saute mushrooms in a little butter until they have released their juices and are light golden brown. Add them on top of chicken and rice.
  • Mix together soup, milk, mayo, lemon juice, curry powder and 3/4 cup of the cheese. Mix thoroughly. Pour mixture over the mushrooms and sprinkle remaining cheddar cheese on top.
  • Toast bread crumbs in melted butter and toss with parmesan cheese -- spread on top of casserole.
  • Bake at 350 degrees for 30 minutes.
