800g butter
10 eggs
10 juniper berries
10 shallots
6 cloves garlic
3 bay
12g thyme
350ml port
350 ml medera
350ml brandy
6g salt
6g pepper

Steps:

  • combine top combine bottom and reduce combine top with bottom set in moulds cook at 100c until centre reaches 54
