- 1. Add olive oil to a large skillet. Season the chicken with salt and pepper. Add the chicken into the oil and fry over med heat until browned on the outside. About 15 minutes turning often. Remove the chicken to a plate and set aside. Add the mushroom, red bell pepper, and garlic. Season with salt and pepper. Cook until mushrooms are browned. Add the white wine and scrap up any bits on the bottom. Add the chicken stock and add the chicken back in. Cook until the chicken is no longer pink inside.
- 2. Meanwhile Mix the sour cream with the flour, sherry and black pepper. Set aside.
- 3. Cook noodles in boiling salted water and drain. Stir in butter. Once the chicken is done remove from pan and mix in the sour cream mixture. Cook until creamy and well incorporated.
- 4. Plate the noodles and top with chicken then the veggie sauce. Sprinkle with parsley and serve.
