Chicken Fajitas image

Number Of Ingredients 10

2 tablespoons vegetable or canola oil
2 onions, sliced
2 bell peppers, sliced
1 1/2 pounds boneless skinless chicken breast, cut into 2-inch-long strips
2 teaspoons fajita seasoning mix or 1 tablespoon, for extra spice
Kosher salt
1 lime, juiced
1/4 cup cilantro, chopped
Warmed flour tortillas, for serving
Sour cream, guacamole, salsa, shredded cheese, chopped tomatoes and/or shredded lettuce

Steps:

  • Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the onions and bell peppers and cook, stirring occasionally, until they start to soften, 5 to 6 minutes. Transfer the onions and bell peppers to a plate and set aside.
  • Add the remaining 1 tablespoon oil, the chicken, 1/2 of the fajita seasoning and 1/2 teaspoon of salt and cook, stirring occasionally, for 2 minutes.
  • Return the onions and bell peppers to the skillet. Add the remaining 1/2 of the fajita seasoning and another 1/2 teaspoon of salt and cook, stirring occasionally, until the chicken is cooked through, about 2 minutes. Add the lime juice and cilantro to the skillet and stir to combine.
  • Serve with the tortillas and desired accompaniments.
