CHICKEN FAJITA STEW image

4 boneless, skinless chicken breasts
1 tbs. oil
1 package fajita mix
1 can chicken broth
2 white onions, chopped
1 red bell pepper, chopped
1 orange bell pepper, chopped
1 can Green Giant Mexicorn
1 can Rotel tomatoes
2 cloves garlic, minced
1 tsp. onion powder
1 tbs. cilantro
1 can black beans, rinsed and drained..
Shredded cheddar cheese (optional)
Sour cream (optional)
Flour tortillas (optional)

Steps:

  • Place all ingredients in a slow cooker and cook on low for 8 to 10 hours. Stir to break up chicken before serving. Serve topped with cheddar cheese and sour cream, if desired. Or serve as a quesadilla by placing stew mixture in a flour tortilla. Add shredded cheddar cheese and sour cream.
