Chicken Enchiladas image

These are a bit different than a regular enchilada. If you like Greek yogurt than you will like the sauce in this recipe.

Number Of Ingredients 14

FILLING
- 3 boneless, skinless chicken breasts; cooked & shredded
- 1/2 cup onion; chopped
- 1/2 cup salsa
- 1 cup mexican blend shredded cheese
- 3/4 cup sour cream
- 1/2 tbsp cumin
- soft tortillas
- salt and pepper
SAUCE
- 3/4 cup of salsa
- 1/2 cup greek yogurt
- 1/2 cup of sour cream
- 2 tbsp green onion

Steps:

  • Preheat oven to 350 degrees. Mix chicken, onion, salsa, cheese, sour cream, and cumin together. Salt and pepper. Spoon chicken mixture on tortillas. Wrap tortillas and place them in a large baking pan. Combine salsa, yogurt, sour cream, and green onions in another bowl. Pour sauce over tortillas. Sprinkle with cheese and bake for 30 minutes.
