Chicken & Dumplings image

I love Chicken & Dumplings. I experimented with this recipe till I came up with my own version. They turned out really good. Hope you enjoy the recipe.

2 c flour
3 Tbsp cooking oil
1/2 c milk
3 scoop(s) chicken broth
1/2 stick margarine
1 whole chicken

Steps:

  • 1. Put chicken on to boil in a large pan till it cooks done. Make sure you add water when it boils down. Always have enough water to cover the top of the chicken. Pull chicken meat off bone when it cools down.
  • 2. Put pulled chicken meat back same pan with broth. Add 1/2 cup of margarine or butter. Let boil slowly while making the dumplings. Make sure you have plenty of water in the pan.
  • 3. To Make Dumplings: Take 2 or 21/2 cups of flour in large bowl. Add 3 tblps. of oil. Add 1/2 cup of milk to flour mixture. Stir. Take a soup ladle and dip into the chicken broth to add enough to work it up. 3 soup ladles worked for me. Stir in till moistened. If it is too dry add little more broth. Do not stir too much will make your dumplings doughy.
  • 4. Roll the dough into a large ball. Take a small section of the dough at a time, and roll out with a rolling pin onto a floured countertop. Roll in a circle to the desired thickness. (This depends on if you like them thick or thin). Take a knife and cut into long pieces. Keep using the dough doing the same procedure till all the dough is used up. Put the dumplings in one at a time into the pan of boiling chicken broth. If boiling hard turn down to lower temp and cook till done. I always sample one to see if they are done. Very good!!
