CHICKEN CURRY CASSEROLE image

Number Of Ingredients 12

3 T. butter
1/4 C. onion, chopped
1 1/2 tsp. curry powder
3-4 C. cooked rice, white or wild
1/2 C. milk
1 can cream of mushroom soup
1 can cream of chicken soup
3/4 tsp. salt, to taste
1/2 tsp. pepper, to taste
2 stalks celery, chopped (optional)
broccoli, chopped (optional)
2 oz. slivered almonds

Steps:

  • Cut up chicken into bite size pieces. Apply curry spice to chicken. Grease a casserole 1 1/2 qt size. Place rice on the bottom. Place chicken add broccoli and slivered almonds on top and sprinkle with salt and pepper. In a small bowl mix soups with milk. Pour over top. Cover tightly with foil and bake 1 1/2 hours in 350 degree oven.
