CHICKEN, CORN & BLACK BEAN SALAD image

Number Of Ingredients 10

1/3 cup apricot preserves
3 Tbsp. lime juice
1 Tbsp. oil
1 tsp. chili powder
1/8 tsp. pepper
2 cups cubed cooked chicken
1 red bell pepper, chopped
2 cups frozen corn, thawed & drained
15-oz. can black beans, rinsed and drained
lettuce leaves

Steps:

  • In small bowl, combine preserves, lime juice, oil, chili powder and pepper and blend well with wire whisk to combine. Combine chicken, bell pepper, corn, and beans in large bowl and toss gently. Pour dressing over chicken mixture and toss gently to mix. Serve salad on lettuce lined plates.
