Chicken Connemara image

I found this recipe at a Restaurant in Dunlaoghaire, Dublin, Ireland.

Number Of Ingredients 9

1/4 c olive oil
2 Tbsp fresh rosemary, minced
1 Tbsp garlic, minced
1/2 c onion, diced
2 c mushrooms, sliced
1 c bacon, cooked and drained, crumbled
1 1/2 lb boneless skinless chicken breasts, cut into strips
1/2 c irish mist whiskey
2 c whipping cream

Steps:

  • 1. Saute rosemary, garlic, onion, and mushrooms in olive oil over medium heat, 3-4 minutes.
  • 2. Add chicken and saute until chicken is almost done.
  • 3. Add bacon, wine and cream. Continue cooking and stirring over medium-low heat until the cream is reduced to a nice smooth sauce, about 7 to 8 minutes.
