CHICKEN & CHEESE EMPANADA FILLING image

Number Of Ingredients 7

1 c. grated mild white cheese
1 c. cooked and shredded chicken, dark meat
2 cloves garlic, minced
2 green onions, minced
1/2 t ground cumin
1 T lime juice
Salt & pepper to taste

Steps:

  • Can also use as stuffing for mashed potatoes (no butter with salt & 2 T warm milk). Dip in egg, roll in mix of 1 c dry breadcrumbs & 1/4 c. flour. Pan fry with oil to half height of papa rellena.
