- Combine ricotta, oregano, salt,and pepper in small bowl. Set aside. Preheat the oven to 350. Rub the chicken with garlic powder. Heat oil in a large skillet over medium high heat. Add the chicken and cook until browned on all sides. Place the chicken breasts, side by side, in a 13x9 pan. scoop 1/4 cup of the cheese mixture and 1/4 cup tomatoes over each breast. Top each breast with 1 slice of mozzarella. Bake in oven until done (30 to 40 minutes) *This is great with leftover tomato sauce instead of crushed tomatoes. **don't be tempted to skip the 'browning' step--it makes the recipe much better.
