CHICKEN BREASTS MILANESE image

Number Of Ingredients 19

6 boneless breasts
1-1/2 C italian seasoned breadcrumbs
1/2 C flour
1 tsp salt
1/4 tsp pepper
2 eggs
2 T water
1 T oil
2 T butter
1 red onion, chopped
1/4 lb mushrooms
1/2 C ham strips
1/2 C chicken stock
8 oz can tomato sauce
1/2 tsp dry basil
2 T sherry
dash pepper sauce
8 oz noodles
1/4 C parmesan

Steps:

  • Flatten chicken. Combine crumbs, flour, salt & pepper. Whisk eggs and water. Dip chicken in egg then crumbs let stand on wire rack 20 minutes. Saute in oil 3-4 munites til brown. Melt butter saute onion, ham and mushroom 2-3 minutes. Add stock, tomato sauce & basil. Simmer stirring constantly. Add sherry and pepper sauce. Combine noodles and 1/2 tomato muxture. Arrange chicken over noodles and top with remaining sauce and cheese.
