CHICKEN BREAST WITH BLUE CHEESE/SHALLOT SAUCE image

Number Of Ingredients 6

1 lb chicken breast/chicken breast tenders
2 tbsp canola oil
3 shallots, sliced
3/4 cup chicken broth
1 tbsp unsalted butter
crumbled blue cheese

Steps:

  • season 3 small chicken breasts with S&P Heat 2 oil in large skillet and cook chix until golden, turning once - 12 minutes. Cover, cook 2-3 more minutes - remove to plate. Cook shallots in drippings 2 minutes. Add chix broth - simmer 5 minutes. Stir in butter. Pour over chix. Top with blue cheese.
