CHICKEN & ASPARAGUS WITH PASTA IN WHITE WINE SAUCE image

Number Of Ingredients 13

1 ½ lbs. Boneless skinless chicken breasts
½ lb. farfalle pasta
Asparagus
Sun dried tomatoes
1 Large White Onion
5 Cloves Garlic (Peeled and Minced)
1 Shallot
Extra Virgin Olive Oil
½ Cup White Wine (Pinot Grigio or Sauvignon Blanc)
Parmesan Cheese (freshly grated)
Coarse Kosher Salt
Fresh Ground Black Pepper
Oregano

Steps:

  • Dice onion and shallot. Chop aspargus into small pieces. Mince garlic Season chicken with salt, pepper and oregano, and slice into small cubes. 1. Prepare pasta and when draining, save one cup of pasta water. 2. Coat the bottom of a sauté pan with olive oil and add white onion, shallot and allow them to sweat. Season with salt and pepper. 3. Add garlic and sun dried tomatoes and cook for several minutes. Then add asparagus. 4. Toss in chicken and sauté until it is cooked. Add pasta water if necessary. 5. Pour in ½ cup (or so) of white wine and more pasta water if necessary. 6. Reduce heat to a simmer for about 5-10 minutes until sauce is reduced. 7. Mix pasta and grated cheese with chicken and vegetables.
