CHICKEN ARTICHOKE PASTA image

1 1/4 lb boneless, skinless chicken breast, cut into bite- size pieces
2 14 oz can basil, garlick & organo flavored diced tomatoes
1 12oz jar marinated artichoke hearts, drained & coarsely chopped
1 2oz can sliced black olives, drained
1 tablespoon Balsamic vinegar
Fresh Basil
1/2 pound angel hair pasta

Steps:

  • In a lightly oiled skillet over medium high heat, saute' the chicken until just cooked through, Transfer to a plate & set aside. In the same skillet, add the tomatoes & bring to a boil, Reduce to a simmer, add artichoke hearts & olives & a tablespoon of Balsamic vinegar, cook until thickened, about 10-15 minutes. Meanwhile, prepare the pasta according to the package directions. Add chicken to sauce & stir to heat through. Serve over pasta with garlic bread & salad or veg.
