CHICKEN ARTICHOKE CASSEROLE (FROM CIS) image

Number Of Ingredients 8

Chicken, 1 cut up fryer (or other parts)
Salt, Pepper & Paprika
Butter, 6 Tablespoons(or less)
Mushrooms, 1/4 pound (or more), cut large
Artichoke hearts, 12-15 oz can (or more)
Flour, 2 Tablespoons
Chicken consumme or boullion, 2/3 cup
Sherry, 3 Tablespoons

Steps:

  • Clean chicken and sprinkle salt, pepper and paprika on both sides. Brown (both sides) in 4 tablespoonfuls of the butter and place in casserole. Now put the other 2 tablespoonfuls of butter in the frying pan and saute the mushrooms for 5 minutes. Sprinkle the flour over the mushrooms and stir in the chicken consumme and the sherry. While this cooks for 5 minutes, drain and arrange the artichoke hearts between the chicken pieces. Then pour the mushroom sherry sauce over them and bake at 375 degrees for 40 minutes. Serve over cooked rice (or with potatoes)
