CHICKEN AND WILD RICE SOUP WITH GINGER image

Number Of Ingredients 12

4 cups water
1/2 cup wild rice, rinsed
1 Tbsp. toasted sesame oil
1 Tbsp. vegetable oil
1 yellow onion, chopped
1 Tbsp. grated fresh ginger
2 garlic cloves, minced
6 cups chicken stock
1 carrot, peeled and diced
1/2 cup long grain white rice
1/4 cup thinly sliced green onions
salt and pepper to taste

Steps:

  • In a small sauce pany, bring 2 cups of water to a boil. Add the wild rice and reduce the heat to a simmer. Cover and cook until rice is tender -- 45 to 50 minutes. Drain if necessary and set aside. In a large pot over medium heat, warm the sesame oil and vegetable oil. Add the yellow onion and saute until softened, 3 to 5 minutes. Add the ginger and garlic and saute stirring frequently for 2 minutes. Add the broth, carrot, white rice and remaining 2 cups of water to the pot and bring to a simmer. Reduce heat and simmer 15 minutes. Stir in wild rice and green onions. Season with salt and pepper and serve.
