Chicken and Ham Lemon Soup image

Savory, smoked ham and a citrusy lemon twist add great flavor for this easy-to-make soup that starts with chicken breasts.

Number Of Ingredients 10

1 lb. boneless skinless chicken breasts
2 cups water
1 bay leaf
1 clove garlic, chopped
3 cups chicken broth
1/2 cup wild rice
zest and juice of 1 lemon
1 cup chopped OSCAR MAYER Deli Fresh Smoked Ham
20 dino kale leaves, rinsed, ribs removed and torn
1 lemon thinly sliced in rounds

Steps:

  • In a large pot, combine water and chicken over medium heat. Cook for 15 minutes or until chicken is tender. Remove from heat. Remove chicken from broth and let cool. Reserve broth.
  • Strain chicken broth into a 5-quart stock pot. Heat over medium heat. Add bay leaf, salt, garlic, 3 cups chicken broth, rice, lemon zest and lemon juice. Cook for 10 minutes.
  • Shred chicken breast and add to soup. Add ham. Cook for 5 minutes more. Remove soup from heat, stir in kale, lemon slices and serve.
