- Slice chicken into bite size pieces, each chicken breast should make about 8 pieces. Marinate the chicken pieces in the pickle juice for 30-60 minutes. Beat the egg with the egg white and milk in a bowl. Combine the flour, sugar, and spices in another bowl. Dip each of the chicken pieces into the egg mixture covering on both sides. Add chicken pieces to a Ziploc bag. Transfer flour mixture from the bowl to the chicken in Ziploc bag and close to seal bag tightly. Shake the bag to cover chicken evenly with flour mixture. Heat the coconut oil in a skillet to about 345-350 degrees. Fry the chicken pieces for 2 minutes on each side, or until golden brown and outside is crispy. Remove chicken pieces and place on a plate. Blot chicken pieces on paper towel and serve immediately.
