Chess Pie image

My mother made this delicious pie when I was a girl and I remember holidays, family gatherings and picnics when some one always brought a Chess Pie! They are well known in KY but I don't see them much in Tennessee. I have seen similar listed as "Vinegar Pie." This is very sweet but a small slice with a cup of coffee is really heavenly! My father-in-law loved them so I always made one when he visited. He would smile and say, "just like my mother made!"

Number Of Ingredients 6

3 - eggs, room temperature
1 1/2 cup(s) sugar
1 tablespoon(s) corn meal (i use yellow but white is fine too)
1 tablespoon(s) vinegar (i use white but apple cider is fine too)
1 stick(s) butter, melted (or 1/4 lb)
1 teaspoon(s) pure vanilla

Steps:

  • Beat eggs lightly in a medium bowl with a fork. Add other ingredients with vanilla and butter being last. Mix all together well with a spoon. Pour into an unbaked 9" pie shell. Bake at 400 degrees (preheated oven) for 10 minutes...(this allows the filling to set up so that the pie will not be runny) Then turn down the oven to 325 degrees and continue to bake approximately 45 to 55 minutes until browned. Cool before slicing. Yummm so delicious!
