Cherry Upside Down Cake image

i made this cake for a friend of mine today..she said she liked cherry pie and chocolate cake..so I put the 2 together..and Mmmmmmm. This cake can be made with other cake mixes and prepared pie fillings... combinations are unlimited...this is quick and easy...

1/4 c margarine, melted
1/4 c brown sugar
20 oz can cherry pie filling
18 oz chocolate cake mix
3 large eggs
1 c water
1/2 c canola oil
white icing,optional, for garnish

Steps:

  • 1. Heat oven to 350^. Spray a large cake pan- I used my pineapple upside down cake pan from dole.You can use your Wilton daisy cake pan if you have one.
  • 2. Smear the butter in the bottom of the pan. Place in oven to melt butter; sprinkle in the brown sugar. Then Spread the can of pie filling over sugar.
  • 3. Make cake using the eggs, water and oil. Beat 2 minutes, so it is blended well. pour batter over cherries.
  • 4. Bake for about 50 minutes or until tested done with a wooden toothpick. Remove from oven and let set upright for 5 minutes.
  • 5. Invert onto cake plate. Cool completely. When completely cooled drizzle white icing over top. enjoy as everyone in my friends office did..Enjoy!
