CHERRY OAT SCONES image

Number Of Ingredients 10

1 1/3 cup all purpose unbleached flour
1 cup rolled oats
1/4 cup sugar
1 tsp baking soda
1/4 tsp salt
1/4 cup (1 stick) unsalted butter at room temperature
1 egg slightly beaten
1 tsp lemon peel
3/4 cup plain yogurt or 1/2 cup buttermilk
1 1/4 cup dried cherries, or fresh berries such as blueberries, raspberries

Steps:

  • Preheat oven to 350F. Lightly grease cooking sheet. Combine flour, rolled oats, sugar, baking powder, baking soda, salt, and lemon peel. Cut butter into flour mixture. Add beaten egg, yogurt into flour mixture and blend thoroughly. Add dried cherries (or fresh berries) and mix until evenly distributed. Pat 1/2 of dough in a flattened circle on floured surface. Cut into wedges and place onto greased cooking sheet. Repeat for second half of dough. Bake 20-25 minutes. Serve with butter and jam.
