Cherry French Bread Pudding image

This is especially for my sister, with love. She'll understand. I lost our only copy of this receipe years ago and finally found it.

2 c milk
2 Tbsp butter
3 eggs
1/3 c sugar
2 tsp vanilla extract
4 c day old french bread, cut into 3/4 in cubes
2 can(s) queen anne cherries (drained)
1/4 tsp salt
2 Tbsp cornstarch
cinnamon, mixed with sugar
whipped cream, sweetened (optional)

Steps:

  • 1. Heat the milk and butter until hot but do not boil. Set aside.
  • 2. Beat eggs, sugar, cornstarch, vanilla and salt together.
  • 3. Gradually add the milk to the egg mixture.
  • 4. Pour over the bread and let stand 30 minutes.
  • 5. Spread cherries over the bottom of a 9" buttered square pan.
  • 6. Pour the bread mixture over the cherries.
  • 7. Sprinkle with cinnamon sugar mixture.
  • 8. Bake at 350 degrees for 30-40 minutes or until tester in center comes out clean.
  • 9. Cool slightly and serve with whipped cream, if desired.
